Monday, March 9th is National Meatball Day!
Lisa Farmer is helping FOX 4 by celebrating a little early! Instead of a traditional Italian meatball, Lisa has decided to follow her heritage and highlight a Swedish meatball supper! Swedish meatballs are traditionally made with a combination of ground beef and pork and a little allspice. They are only about one-inch in diameter, and fairly time-consuming. For this reason, Lisa said she was so excited to find a delicious frozen version at the IKEA Marketplace! Swedish meatballs must be served with cream sauce, mashed potatoes and lingonberry jam! The sauce and jam are also available at the IKEA Marketplace. She stopped by FOX 4 and made her favorite creamy mashed potatoes to complete the quick and easy meal!
Creamy Mashed Potatoes
Ingredients:
- 3 pounds Yukon gold potatoes
- 2 teaspoons salt
- 1/3 cup unsalted butter
- 1/3 cup evaporated skim milk
- 4 ounces cream cheese, softened
- ¾ teaspoon black pepper
Instructions:
1. Peel potatoes, and cut into 1-inch pieces. Bring potatoes, 1 tsp. salt, and cold water to a boil in a medium-size Dutch oven over medium-high heat. Reduce heat to medium-low, and cook 16 to 20 minutes or until fork-tender; drain.
2. Return potatoes to Dutch oven. Cook until water evaporates and potatoes look dry. Mound potatoes on 1 side; add butter, next 3 ingredients, and remaining 1 tsp. salt to opposite side of Dutch oven. Cook 1 to 2 minutes or until butter is melted and mixture boils.
3. Remove from heat; beat at medium speed with a hand-held electric mixer 30 seconds to 1 minute or to desired degree of smoothness. (Do not overbeat.)
4. Heat meatballs according to package directions. Make sauce according to package directions. Serve with lingonberry jam.
